In the bustling streets of New York City, a new food trend has taken the culinary world by storm: plant-based cuisine. What was once considered a niche diet for the health-conscious is now a growing movement celebrated by foodies everywhere.

 

I arrived at Green Garden, a small but vibrant restaurant in Brooklyn, to meet chef and owner Maria Lopez. Her passion for plant-based cooking is evident in every dish she creates. "It’s about showing people that eating plant-based doesn’t mean giving up flavor," she tells me as we sit at a rustic wooden table adorned with fresh herbs.


Maria serves me her signature dish: a jackfruit "pulled pork" sandwich. At first glance, it looks just like the real thing—juicy, tender, and packed with smoky flavor. With my first bite, I was amazed by how the jackfruit absorbed the BBQ sauce and spices. It was sweet, savory, and satisfying, without any meat.

 

The rise of plant-based cuisine isn’t just a trend—it's a lifestyle shift. Many people are turning to plant-based diets not only for health benefits but also for environmental reasons. The meat industry is one of the largest contributors to carbon emissions, and switching to plant-based meals can reduce our environmental footprint.

 

But what about taste? Many food lovers worry that cutting out meat means sacrificing their favorite flavors. However, chefs like Maria are proving that plant-based foods can be just as delicious, if not more so. Take her creamy cashew-based Alfredo pasta, for example. The sauce is velvety and rich, with hints of garlic and nutmeg. It’s comfort food at its finest, and you’d never guess it was dairy-free.

 

"We want to create food that everyone can enjoy—whether you're a meat-eater or a vegan," Maria says with a smile as she offers me a taste of her beetroot chocolate cake. The deep red color is striking, and the earthy sweetness of the beetroot pairs perfectly with the rich chocolate. It's a dessert that feels indulgent but comes with none of the guilt.

 

As I leave Green Garden, I realize that plant-based cuisine is not just a passing fad. It’s a revolution in how we think about food, our health, and the planet. And with dishes this tasty, it’s a revolution that everyone can get behind.

  3. My favorite food is: a delicious cut of meat, preferably "Rib Eye" accompanied by a delicious meat juice and of course a delicious salad that cannot be missed. It's my favorite food because the juiciness of the meat and the texture and flavor is delicious, apart from the juice of the meat, it's like a soup and it helps if your meat is not very juicy, it takes away that dry flavor. Combining it with the salad, I try several and I love them all, but the ones I like the most are the ones that come with cheese and strawberries. If it comes with that, I'll gladly eat it. The presentation changes a lot depending on the restaurant or the chef, although my favorite place to eat all that is "La Fonda Argentina"
